I don’t cook a lot but I can recommend a couple blogs if you feel like browsing some? https://nirvanacakery.com/ is dessert, but all vegan so presumably uses a lot of fruit/veg, and https://www.theawesomegreen.com/ is vegetarian and does more actual meals.
